Not much today, but more to show you that it doesn’t need to be complex or involve much cooking to get a good feed in.

The lacto-fermented vegetables are really good with game meats: the vinegary sourness really cuts the heaviness of the game  - it would be great with venison, roo, etc.

This is an easy to prepare meal: spoon some fermented veg out of a jar, cook some game or reheat some previously cooked from the night before and eat. Afterwards, have some blueberries and a couple of spoons of macadamia butter (make sure you stick with in the guidelines of what has been prescribed to you by your Bio-Sig practitioner)

Muckeld Egg

This was one of my Granddad’s favourite breakfasts, and I grew up with this… when the Fam gets together and we go away, this is always on the breaky menu.  I ate it for dinner the other night, got home late and wasn’t much left in the fridge so whipped this up in no time (eggs and bacon don’t just have to be for breakfast!!)

as many eggs as you need i put 5

as much Nitrate Free bacon as you need (I use 4 rashers)

one onion diced

one tomato diced

2 tsp organic butter (not margarine, nutelex, olive grove or any of that similar shit, it’s fucken rubbish!)

1 tsp herbamare (as I’ve told you before this stuff is the Colonel’s secret herbs and spices :D )

Put your eggs in a bowl and  beat it,

Throw the rest of the ingredients in the pan, fry a little to get some colour,

Add the eggs,

Serve on a plate with what ever you want… I had some sweet potato, and broccoli sprouts.

Remember adjust the protein, carbohydrate & fat ratios according to what your personal trainer/coach has set up for you to achieve your fitness/fat-loss goals :)

Mexican Style Veal Slow Cook.

1kg diced veal

1 ham hock (optional could use some nitrate free bacon, this just adds a real depth of flavour)

1 tin tomatoes

1 medium brown onion diced

1/2 bulb garlic diced

1 filtered cup water

1 good quality organic vegetable stock cube (forget that rubbish shit at the supermarket!)

1 tsp cumin

2 tbsp ground coriander seed

2 tbsp dried thyme

2 tbsp dried oregano

3 tsp chipotle powder

1 tsp celtic sea salt

1-2 tsp herbamare (to taste)

1/2 cup coconut flour

2 tbsp coconut oil

coat veal in coconut flour then brown in pan with coconut oil,

then combine the rest of the ingredients in a slow cooker,

Add the veal and slow cook the shit out of that bitch (about 6 hours)….

Depending on your Strength Coach or Personal Trainer has set your dietary requirements for? Hi carb day / Low carb day… you can put this over many things, over a baked sweet potato or potato, with some rice or rice and peas (black beans)

you can have it by itself like i did… with some green beans, capsicum, carrot and Guacamole

What’s on the Menu 1

Thought i start throwing one of these posts out each week, as i always get people complaining they don’t know what to cook, and food is getting boring etc, etc, my general reply is pull your skirt up you fairy and watch a cooking show or read a cookbook, well now you read the latest post instead :)

On the menu today is – Mexican Chicken Burgers, with Guacamole and Green Beans

Now i never cook a small amount of meat its a waste of time, ill cook enough for a few meals and just change what i have with it, so it doesn’t feel like I’m eating exactly the same thing ie; this one was guacamole and green beans, next one might be with a rocket, goats cheese and balsamic salad or i might add a baked sweet potato and some home made tomato salsa….. so if you want to make a smaller portion adjust the amounts acordingly

How to Make

Burgers

2 kgs of free range chicken mince

2 tsps of dried chipolte chilli powder

1 tsp cumin

4 tsp ground coriander seed

2 tsp herbamare (its an organic sat made from veggies and herbs TASTY SHIT!)

2 tbsp dried rosemary

1/2 cup pine nuts

1 medium brown onion diced finely

1/2 bulb of garlic diced finely

2 tbsp olive oil

2 tbsp coconut oil

put a tbspn of the coconut oil in pan and heat, add in onion and garlic sauté till translucent, and take out of pan and allow to cool. in a big bowl combine all the other ingredients except for the remaining tbsp of coconut oil this will be used to cook the burgers.. once onions and garlic have cooled mix all the ingredients together, shape in to burger patties and cook.

Guacamole

1 avocado mashed

1 roma tomato diced

1/2 small red onion finely diced

2 tbs olive oil

1/2 lime juiced

tsp herbamare

mix all the ingredients in a bowl then put on top of you cooked burgers.

Green Beans

big handful of green beans

top and tail the green beans and throw them bitches on the plate.. yes they are RAW, more nutrients, less cooking so don’t whinge!

Guilt Free Ice Cream – and some cool coconut facts

I’ve been playing around with this one for the last couple of days and seeing what I can do with it. I got the idea from Jamie’s 30 Minute Meals, but put my own twist on it and without blowin’ my own trumpet, it worked out much better. The problem I’ve found with this is that it’s so tasty, sometimes it does not make it to the freezer…..

Ingredients

1 270ml tin of coconut cream

400g of frozen mango

chop mango into small chunks throw in food processor with coconut cream, blend till smooth then place in a tupperware container and freeze……SIMPLE.

You can use almost any frozen fruit – I’ve done almost every berry known to man, but raspberry is one of my favourites. With some berries like raspberries, you may need to sweeten, so I just add agave syrup to taste and also vanilla bean paste.

Raspberries with 70% dark chocolate grated through it is good too.

Cardiovascular Health

Note: A large number of studies are showing a direct correlation between chronic low-grade bacterial and viral infections and coronary heart disease. The primary culprits are Chlamydia pneumoniae, Cytomegalovirus, and Helicobacter pylori. Sweet Potato & Chick Pea Soup

500ml quality vegetable stock

2 tins tomatoes

1 bulb of garlic

1 thumb size piece of ginger

1-2 chilies (habanero/scotch bonnet peppers, are best but remove seeds and pith if you dont want your head to blow off)

1/2 bunch of thyme

2-4 lemon myrtle leaves (if you cant find just leave out)

2-3 sweet potato

1-2 leek

1 tin garbanzo beans (chick peas)

1 bunch of kale or english spinach

3 tbs olive oil

10 pimento seeds crushed (all spice)

1 tbs of a quality sea salt (like Murray river salt or Celtic sea salt)

Wash and slice leeks, saute in pot with olive oil over a medium heat till soft. finely chop ginger, garlic, chilies, lemon myrtle & thyme crush pimento seeds in mortar & pestle, place in with leeks cook the rawness out.

Throw the in tomatoes and stock bring to a boil, take off heat cool and blend mixture smooth. Return pot to heat, chop up sweet potato into small pieces so that it doesn’t take long to cook. once sweet potato is tender throw in rinsed garbanzos and chopped kale.

Take pot off the heat or turn off element, the residual heat left in the pan will be enough to heat beans and wilt kale.

Serve with a grilled chicken beast or have as an entree. MUNG IN!

Smoothie Recipes

BERRY SMOOTHIE

½ cup Strawberries
½ cup Raspberries
½ cup Blackberries or blue berries
1½ cups almond milk or raw goats milk

Place all of the fruits and milk in the blender and blend until smooth. Pour into a glass over ice and garnish with raspberries and blackberries and sprinkle with some cinnamon.

CHOCOLATE SMOOTHIE

1 Banana
1 cup soaked, sprouted, brown sesame seeds
1½ cups almond milk or raw goats milk
2 Tbs Green & Blacks coco powder
a drop of almond extract

Mix in a blender until smooth. Grate some 70% cocoa green & blacks dark chocolate over the top.

GREEN SMOOTHIE

1 kiwi fruit
½ banana
1½ cups almond milk or raw goats milk
2 cups Baby Spinach
1 Tsp Primal Greens

Peel and slice the kiwi fruit, and blend. Add banana, milk, spinach & greens powder. Blend until smooth
Pour over ice cubes in two long glasses.

Vegetable & Goat Cheese Tart

12 x Organic Eggs
150ml x Organic Heavy Cream
100-200g Fresh Goats Curd (Substitute Feta)
1 x Zucchini (diced)
1 x Bunch Asparagus (chopped into 3cm batons)
2 cups x Butternut Pumpkin (Diced 2-3cm)
1 cup x Cherry Tomato
Salt & Pepper to Taste
Tbs Organic Butter

Steam Pumpkin till tender leave to cool, heat some butter in a pan sauté the Zucchini leave to cool. Wisk Eggs and Cream Together, grease a baking dish. Combine all ingredients into baking dish, place into a preheated oven 180*C for 25mins. Leave to cool slice into 4, and serve with a nice salad or some steamed veggies.

If your looking to get leaner, you can cut the fat content by cutting the cream in half, remove 4-6 egg yolks and replace with an extra 4-6 egg whites. this will reduce the the calories significantly without sacrificing too much flavor.

Mediteranian Lamb & Kangaroo Patties

1kg Lamb Mince
1kg Kangaroo Rump Minced (substitute lamb)

1 Tbs Coriander Seed
1 Tbs Cumin Seed
1 Tsp fennel Seed
1 Tsp Black Pepper Corns
1 Tbs Celtic Sea Salt
3 Tbs Thyme
1 Egg (organic preferably)
2 Zucchini (fine dice)
1 Red Onion (fine dice)
2 Tbs Extra Virgin Olive Oil

Heat pan roast cumin, fennel & coriander. Remove from pan, place in mortar and pestle with peppercorns break up roughly.

Add 1 tbs olive oil to pan, sauté onions & zucchini. Remove from pan and leave to cool.

Combine all ingredients in a large bowl including remaining olive oil and mix well (the olive oil will help the patties stay moist during the cooking process since were using meat with little fat). Cover and leave in fridge for 30mins.

Remove bowl from fridge, form patties to the size and shape you like. “Broil” cook under the grill on hi with the door closed 7-10 mins each side. This is dependent on your oven/grill and how close you place the patties to the element..

Ive found from experience that the best burger patties are cooked this way the BBQ or the pan will dry them out slightly when you use lean meat.

Serve with some Tatziki, Marinated Grilled Veg (eggplant, red peppers, mushrooms), Baby Spinach and a Wedge of Lime.

Real Food Brownies

I got the inspiration for this little gem from Dr. Jonny Bowden’s Book “the healthiest meals on earth”. But have put my own twist on it.

I have made two versions,they are both packed full of fiber, antioxidants and vitamins, is gluten, dairy and soy free.

Don’t be put off by the garbanzo’s (chickpeas) most people dismiss the recipe straight away thinking it will taste like hummus? It doesn’t chick peas by them selves are very bland and is a great substitute for flour.

If you’re lean (below 10% body fat) you could eat the baby’s almost every day. But if you are trying to loose those extra Kg’s, eat them when you get that cake-craving urge.

They are a healthy gluten free alternative, great for coeliacs and people with gluten intolerance and are so good for you I could hardly call it cheating.

Choc & Almond

Ingredients;

  1. 1 ¼ cups (225g) pitted dates
  2. 8 Tbs high quality cocoa powder
  3. 2 x 100g block of good quality 70% cocoa dark chocolate grated
  4. ½ cup almond nut butter
  5. 1 cup almond flakes
  6. 3-4 heaped Tbs of Agave syrup or a good quality Honey
  7. 2 cups (450g) chick peas (garbanzo beans) rinsed & drained, fresh cooked is best.
  8. 6 eggs
  9. ½ Tsp baking powder
  10. 1 Tsp ground cinnamon

Pre heat oven to 180*C measure dates into a liquid measuring cup and pour in hot water to the 1 ½ cup (355ml) line, turning dates over with your hands till the water reaches all the dates.

Let sit for 10mins, Pour off ¼ cup (60ml) of the liquid in the dates and process the rest in a blender or food processor until it forms a smooth paste.

Put the date into large bowl. Add cocoa power, grated choc, nut butter, agave or honey & nuts mixing well.

Combine beans and eggs in a blender or food processor and process till very smooth.

Add bean mixture, baking powder and cinnamon to date mixture stirring well to combine. Line a 23cm pan or pie dish with baking paper and pour batter in, about an inch (25mm) thick.

Don’t make it too thick, as it won’t cook properly. Bake for 45mins. Allow to cool for 1hour, cut and serve. Store in refrigerator.

Banana & Macadamia

Ingredients;

  1. 5-6 medium Bananas (400+g) the riper the better
  2. 8 Tbs high quality cocoa powder
  3. 2 x 100g block of good quality 70% cocoa dark chocolate grated
  4. ½ cup macadamia nut butter
  5. 1 cup crushed macadamia nuts
  6. 3-4 heaped Tbs of Agave syrup or a good quality Honey
  7. 2 cups (450g) chickpeas (garbanzo beans) rinsed & drained, fresh cooked is best.
  8. 6 eggs
  9. ½ Tsp baking powder
  10. 1 Tsp Vanilla Paste

Now obviously the process is the same you don’t have to soak bananas though.

What I also like to do is leave little chunks of chocolate and banana in the batter.
You could also melt down some dark chocolate 70%+ of course and coat the top of the brownies…Enjoy.
